Candidate organisms are selected and screened, then genetically and epigenetically optimized to efficiently complete the desired valorization reaction.
Protein structure prediction, aggregation of biochemical information and complete genome mapping allow precise targeting of enzymes to substrate, and genes to secretory mechanisms.
Leveraging this established pipeline allows rapid screening, optimization and deployment of modified A. oryzae (koji), with existing U.S. safe-use precedent and GRAS approval.
